This meringue kiss tower is perfect for a high tea birthday party. Yum!


Meringue kisses

  • 6 egg whites
  • 375ml castor sugar
  • pinch salt
  • 5ml vanilla essence
  • red food colouring
  • 500g strawberries, husks removed, to serve

Royal Icing

  • 1 egg white
  • 250ml icing sugar, sifted


  • Preheat oven to 110°C. Line a large baking tray with baking paper. Prepare 2 piping bags each fitted with a star-shaped nozzle.
  • Beat egg whites until stiff. Add sugar a heaped tablespoon at a time, beating continuously until fluffy and glossy. Beat in salt and vanilla.
  • Divide meringue mixture between two bowls and add a drop of food colouring to one. Spoon each mixture into a piping bag.
  • Pipe R5-coin-sized kisses onto the prepared baking sheet. Bake for 1–1½ hours until crisp. Remove and set aside to cool completely.
  • Mix ingredients for royal icing together and cover with cling film until ready to use.

Assemble your meringue kiss tower

Step 1

Shape a cone using cardboard and get ingredients ready.

Step 2

Spread royal icing on the bottom of each meringue and stick onto the cardboard cone.

Step 3

Add strawberries around the base of the cone and dust with icing sugar.
